Flo’s Diner
As part of our ongoing series, we are interviewing people of interest in the community who are having a positive impact on the lives around them.
This time we are spotlighting Florene Trainor from Flo’s Diner!

Can you tell me about the history of Flo’s Diner and how it came to be?
My husband and I had looked into purchasing the Chalfant Mercantile for several years, but it was not the right time. In February of 2020, we decided to go for it, and purchased the building and property. I originally wanted to call it “The Oasis”, but my husband said, “No, we have to call it Flo’s Diner.” With that, it took on the retro 50s look. But, our timing was not so ideal with Covid just hitting the country. Our first year was tough with no dining indoors but we prevailed and we are still going strong!

What sets Flo’s Diner apart from other diners in California?
We are family-owned and operated and not a franchise. We decide what is on the menu and how to prepare the food. Customer service and satisfaction is our top priority. In addition to the restaurant, we also offer groceries, beer, wine, and gasoline for our local residents.
What are some of the most popular dishes at Flo’s Diner, and why do you think customers love them?
We have several specialties such as our Roast Beef Melt, an old family recipe using slow-roasted beef that is then shredded and marinated in a savory sauce. Or the Boss Hog with deep-fried jalapeno poppers and pork belly stacked on top of a 1/3 lb beef patty. Hamburger aficionados tell us that our Flo’s Classic is the best burger they have ever had. And of course, there is the pizza! Our pizza crust is the best you will find most anywhere (even those from New York have told us this). It is crusty but still has a soft interior. Customers can choose their own toppings or go for one of our signature creations such as the Squealer with pork belly, jalapenos, and pepperoni on top of cheese and a white sauce, or the Barbecue Chicken pizza with barbecue chicken, jalapenos, pineapple, and red onion. And of course, we have several vegan and vegetarian options.

Can you describe the atmosphere and ambiance of Flo’s Diner?
Flo’s Diner has a retro 50’s vibe complete with a jukebox and Elvis on the wall. 50’s music is played all day long with the classic red and white chairs, white vinyl tables, and a black and white checkered floor. The atmosphere is fun and family-friendly. In addition to inside dining, Flo’s has a large outdoor patio complete with a stage for entertainment, picnic tables, and dog friendly.

How has the menu evolved over time, and are there any signature dishes that have been on the menu since the beginning?
Flo’s opened with a couple of sandwiches we no longer carry such as the Elvis (peanut butter and bacon jam), and the Forrest Gump (deep-fried shrimp tossed in our signature shrimp sauce on a hoagie roll). For the most part, our menu has remained the same. We do have specials now and again such as Prime Rib Dinner, and homemade pasta with fresh veggies and a choice of shrimp, chicken, or beef.
Flo’s Diner is looking for a new owner who would like to carry on with our current success and make it even better! Tim and Flo are looking forward to retirement and would love to hand the reins to someone with the passion we have. If you or someone you know is interested, please reach out to Flo at Flo’s Diner!
Flo’s Diner is just a short 12-mile scenic drive from Bishop on Highway 6 in the heart of Chalfant Valley, where you will find fantastic food and fabulous service in a 50s diner.
A special thank you to Flo’s Diner for answering our questions!
