Big Pine’s New Food Truck: Chuckwagon!
With the loss of The Country Kitchen and Carroll’s Market in Big Pine, there seems to have been a void left in their absence. Luckily, places like Brewed Awakening, Two Brothers, Copper Top, Hugo’s and Rossi’s have stepped in with excellent menu items to fill the void. Well, another one who has stepped up to the place is a new food truck in town called Chuckwagon, and we reached out to manager Keith Roberts to get the details.
1. Can you tell me a little bit about how Chuckwagon started? How did you come up with the concept and menu?
The Chuckwagon was started by Chris Holt, who also owns the Bristlecone Motel and Hi-Country Market in Big Pine. He saw an opportunity to fill a need in the community and went for it.
We are a family-run business that serves delicious, housemade meals using only the highest quality ingredients. We source the ingredients we can locally, and we take pride in our commitment to using fresh, seasonal ingredients in all of our dishes. Our goal is to create food that is not only delicious but made from quality, healthy, whole foods.
2. What is a chuckwagon, historically speaking?
A Chuckwagon was the first mobile food truck, a wagon that served food to the cowboys on cattle drives. A chuckwagon could feed an entire work crew out on the range using ingredients like beef, beans & sourdough biscuits cooked up in a Dutch oven.
3. What are your most popular menu items?
The grass-fed local beef burger has been a hit. It comes with your choice of cheese, lettuce, tomato, onion, and a housemade burger spread on a Great Basin Bakery ciabatta bun. Our beef comes from the local ranch, Barbwire Beef. Add a side of fries to your burger, they are made with avocado oil and in an air fryer.
Also, the teriyaki chicken sandwich which is a whole chicken thigh, marinated in a housemade traditional Japanese teriyaki, topped with melted provolone and coleslaw on a ciabatta bun.
Or try our sourdough waffle with maple cream sauce! Our breakfast sandwich can be served on a sourdough waffle, hot off the press! The combination of flavors is unique and savory. Come and try it for yourself!
