As part of our ongoing series, we are interviewing people of interest in the area who are having a positive impact on our community.
This time, we reached out to The Rolling Chef 395, a popular food truck in the valley!

Can you tell us a little bit about The Rolling Chef 395 and what kind of food you offer?
The Rolling Chef 395 is a concept of fusion latin flavors from different parts of central and South America. Our menu is created with many different delights such as sandwiches, bowls, and appetizers.



What inspired you to start a food truck business?
What inspired us to start a food truck really goes back all the way to 2015 when we used to live in Los Angeles. The inspiration was the beginning of a dream project that we have been working on and the food truck is part of what we called small beginnings. Our dream is big and we are just 1/2 way there.

Please tell me about your most popular menu item and what makes it so special.
Our most popular items I can say are “THE WHOLE MENU.” What makes our food special and unique is our Chef Ismael Rivera who created every single food item with his culinary creativity.

Are there any upcoming events or locations where customers can find your food truck?
For our Bishop location food truck, you will find it at its regular location by Chase bank Monday to Friday 9am to 5pm and our Mammoth location is located in the Footloose Sports parking lot Tuesday to Sunday 9am-5pm. Our Bishop location will of course be at all the summer events.

Can you share any memorable experiences or stories from operating your food truck?
During the Covid lockdowns, we were one of the few places open to eat and we got to experience something cool – a customer stopped by and ate with us and was giving money to people that were coming to place an order from us.
Customers were very surprised and did not know how to react. After this very kind customer received his food, he gave us a significant amount of money and said “please feed all the lost souls.”
